Is there a potential option to list all the pages to a topic in the topic display, rather than have it list pages 1 to 5 then a further option to go to the last page?

You can choose how many posts are shown per page in your User CP, the default is set to 20.
Topics shown per page is currently set at 25, I don't think there's a user option for that.
