If this Grevious is a clone of the previous Grevious, why is he still mostly droid?
Ah! An interesting question demanding an interesting answer.
The original survived from a planned shuttle crash and was made into the cybernetic monster that he is. In my bio, the Daemuns during that time obtained samples of his genetic material and kept it for themselves to utilize when the appropriate time came.
Knowing how much of an advantage the cybernetic shell performed during the Clone Wars, the Daemuns saw no reason why the clone should bother keeping his body. When he was fully developed in the vat, he was surgically modified and encased in a cybernetic shell. The shell is of course, identical in appearance, but enhanced with Daemun technology. You won't be able to crush his chest like Mace Windu did, and you definetely won't be able to fire a blaster shot into his chest.
